You are probably already aware that Mamma Spice is a lifelong vegetarian, and so many of the recipes we have on our website are plant-based by default. What is Veganuary anyway? 

In the UK, the month of January is dedicated to inspiring people to make the shift to eat less meat and be kinder to animals and the planet. 

With one in 3 of us in the UK considering going vegan in 2022, January is the perfect time to give a plant-based diet a try. 

What’s more, there has never been a better time to experiment with a plant-based or vegan diet. Supermarkets are full of meat-free alternatives, and celebrity chefs are constantly developing fabulous new recipes and ideas. 

When did Veganuary Start?

The 'Veganuary Challenge' actually started in 2014 when Veganuary (a not for profit organisation) encouraged people to try a plant-based diet for a month. The organisation has seen a massive surge in interest in more recent years, and reports that over 500,000 people have now signed up for the challenge! So, if you are trying Veganuary for the first time, you are in good company! 

How to do Veganuary? 

It sounds relatively straightforward to give up meat and dairy for a month, right? 

However, there are some considerations you need to make to ensure you get the right amount of vitamins and nutrients into your diet. Take a look at this article by the Guardian, which covers everything from getting enough protein to making your new diet more affordable! 

How to go vegan for a month 

In terms of your day to day planning, you are going to want to base your meals around foods that fill you up, like pasta, rice or potatoes, and then add loads of veggies into the mix. Fruit is going to be your best friend, and so make sure your fridge is packed full of lots of colourful options, and of course, try out some alternative dairy products like oat or almond milk for your cereals and hot drinks.

Our Top 6 Vegan Recipes to get you though January 

We’ve given you a blend of curries, mains, sides and Friday night treats to explore on your Veganuary Inspiration journey. The key with vegan food, we’ve found, is to double down on flavour with lots of spice and seasoning, that way your tastebuds are going to forget all about what isn’t in the dish and be totally tantalised by all of the big flavours going on. 

Vegan Green Falafel Burger with Shakshuka Chutney 

If you’re anything like us, you love a good burger. Don’t miss out. This recipe is super easy and great for a work night or a treat. We love ours served in a fresh burger bun with sliced red onion and a cheeky beer on the side – yummmmm!

Grilled Aubergines with Tamarind 

Veganuary is all about showcasing and bringing plants to the forefront of our diets. 

This recipe brings the humble yet versatile aubergine to the foreground. Grilled to perfection and finished with a simple sprinkle of mint.

Middle Eastern Coleslaw with Cashews and Za'Atar

This recipe is not only super frugal (red cabbage is one of the cheapest veggies you can buy), but full of health benefits too. Treat your friends and family to a dish they will never forget. This beautiful and fragrant curry is packed with vibrant fresh ingredients and spices. Serve with your choice of rice, naan bread or both! 

Grilled Vegetable Couscous
