Ten-Minute Pizza Toasts

All the flavours of pizza—ready in minutes.

Ingredients (serves 2)

4 slices of thick-cut bread (sourdough, ciabatta or regular white/wholemeal work well)

4 tbsp passata or pizza sauce

1 tsp Italian seasoning

1 garlic clove (optional), halved

100g grated mozzarella cheese

Your favourite toppings (e.g. cherry tomatoes, sliced mushrooms, olives, pepperoni, sweetcorn, red onion)

Olive oil

Salt & pepper

Fresh basil (optional, to serve)

Method

Toast the bread lightly in a toaster or under the grill, just until it firms up slightly—this stops it from going soggy.

Rub each slice with the cut side of the garlic clove (optional) and drizzle with a touch of olive oil.

Mix the passata with the Italian seasoning and a pinch of salt and pepper. Spread it generously over each slice of toast.

Sprinkle with mozzarella, then add your chosen toppings.

Place the toast under a hot grill (or in a preheated oven at 220°C/200°C fan) for around 5–7 minutes, or until the cheese is bubbling and golden.

Finish with a sprinkle of extra Italian seasoning or torn fresh basil, if using. Serve hot!
