I love making these easy delicious paneer tikka. The paneer be easily substituted with tofu.
The marinade packs a punch with lots of spices and flavours and it takes less than 30 minutes to make this summer easy dinner. Check the recipe below.
INGREDIENTS
- 1 packet of Paneer, cubed into pieces
- Cornflour for dusting paneer
- 1/2 chilli, finely chopped
- 3 tbsp of natural yogurt
- 2 tbsp of olive oil
- 3 cloves of minced garlic
- thumb of grated ginger
- Spices: ½ tsp of salt, chilli powder, turmeric, garam masala, cumin powder, coriander powder, chaat masala
- Juice of half a lemon
- Fresh chopped coriander
- Half an onion chopped chunky
- Chunky greens of a spring onion
- Mixed colour peppers chopped chunky for skewers
METHOD
- Pre-soak your skewers for 30 mins to avoid burning.
- Add 3 tbsp of natural yogurt to a bowl. Add the oil, half a chilli (finely chopped), minced garlic, grated ginger and spices (listed above).
- Dust the paneer with some cornflour.
- Add in chopped peppers and chopped onions (a handful of chopped green onion in between looks quite nice).
- Add the paneer and mix well. Try not to break it and marinade it for as long as you can.
- Skewer the paneer and alternate with peppers and onions.
- Place on tray and cook for 5-10 minutes (keep rotating).
