- 4 garlic cloves, finely minced
- 50ml extra virgin olive oil
- 2 lemons, juice and zest
- 1 tsp paprika
- 1/2 ground black pepper
- 1/2 tsp turmeric powder
- 1/2 tsp ground ginger
- ½ tsp chilli powder
- 300g fresh sardines, cleaned, scaled, and gutted
- 2 tbsp chopped fresh parsley
- Lemon wedges
In a bowl, mix the garlic, olive oil, lemon juice, zest, paprika, pepper, turmeric, ginger and chilli powder.
Add the sardines to the bowl and mix through, making sure to rub the marinade inside the sardines. Leave to marinate in the fridge for 1 hour or longer.
Fire up the BBQ or a griddle pan and once hot, add the sardines and grill for 3 minutes each side.
Remove the sardines to a serving plate, sprinkle the parsley on top and serve with the lemon wedges.
