Grilled Lemony Goat Chops

Goat tends to have a strong, gamey flavour and works so well in this recipe with simple onion salt and a dash of lemon.

INGREDIENTS

  • 8 goat chops one inch thick (we buy ours from www.cabrito.co.uk)
  • 1 tsp onion salt
  • 2-3 tbsp olive oil
  • 1 lemon
  • 2 tbsp chopped coriander

METHOD

  1. Mix the onion salt with the olive oil and coat the lamb chops. Leave to marinate for 1 houror more.
  2. Fire up the BBQ until searing hot. Sear the chops for 2 minutes on each side.
  3. Once cooked, remove, place on a platter and cover with foil.
  4. Allow to rest for 10 minutes before serving.
  5. Squeeze the lemon juice on top and sprinkle the coriander before serving.
