Balsamic Grilled Chicken Breast

Chicken with sticky balsamic and herby goodness is one of our favourite things.We love this dish served simply with a crisp salad and a chilled glass of pinot.


  • 4 chicken breasts
  • 50ml balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp jaggery
  • 3 cloves garlic, minced
  • 1 tsp chopped fresh thyme
  • 1 tsp chopped fresh rosemary
  • 1 tsp rosemary salt
  • Freshly chopped coriander for garnish


  1. In a medium bowl, whisk together balsamic vinegar, olive oil, jaggery, garlic,rosemary salt and herbs.
  2. Add chicken to the bowl and toss to combine. Let marinate at least 1 hour, overnight if possible.
  3. Preheat grill to medium-high. Add chicken and grill for 6-8 minutes each side, basting with the marinade, until cooked through.
  4. Garnish with chopped coriander before serving with some salad or crisp steamed vegetables.
