- 4 chicken breasts
- 50ml balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp jaggery
- 3 cloves garlic, minced
- 1 tsp chopped fresh thyme
- 1 tsp chopped fresh rosemary
- 1 tsp rosemary salt
- Freshly chopped coriander for garnish
In a medium bowl, whisk together balsamic vinegar, olive oil, jaggery, garlic, rosemary salt and herbs.
Add chicken to the bowl and toss to combine. Let marinate at least 1 hour, overnight if possible.
Preheat grill to medium-high. Add chicken and grill for 6-8 minutes each side, basting with the marinade, until cooked through. Garnish with chopped coriander before serving with some salad or crisp steamed vegetables.
