One Pot Mexican Rice Skillet by Little Baby Bites
This was a little experiment in the kitchen that turned out absolutely delicious! So flavourful and full of the good stuff.
INGREDIENTS

- 2 medium onions - chopped
- 3 tomatoes - chopped
- 3-4 pods garlic - chopped
- 120g rice (soaked for 30 mins)
- 1 low salt vegetable stock cube
- 1 tin red kidney beans/ black beans drained and rinsed
- 1/3 cup peas
- 1/3 cup sweet corn
- 1 carrot chopped
- 1.5 tbsp Mexican spice ( I used @spicekitchenuk )
- 1 tsp smoked paprika
- 1/2 tsp paprika powder
- 3 tbsp cilantro
- Cheese to sprinkle on top (can use df)
- Oil
- Water to cook the rice
- Limes
- In a pot, add some olive oil and add the onions and garlic
- After 2-3 mins add the spices, and sauté for a couple of mins on low heat
- Add the tomatoes and veggies and cook for a couple of mins
- Now add the beans and mix well
- Add the rice, crumble the stock cube and add enough water to cook the rice
- Add half the cilantro, cover and cook until the rice is done
- Now sprinkle cheese on top, followed by the rest of the cilantro, cover and steam until the cheese is nice and merry
- Serve warm with a squeeze of lime juice and enjoy
