One Pot Mexican Rice Skillet by Little Baby Bites

This was a little experiment in the kitchen that turned out absolutely delicious! So flavourful and full of the good stuff.

INGREDIENTS
  • 2 medium onions - chopped
  • 3 tomatoes - chopped
  • 3-4 pods garlic - chopped
  • 120g rice (soaked for 30 mins)
  • 1 low salt vegetable stock cube
  • 1 tin red kidney beans/ black beans drained and rinsed
  • 1/3 cup peas
  • 1/3 cup sweet corn
  • 1 carrot chopped
  • 1.5 tbsp Mexican spice ( I used @spicekitchenuk )
  • 1 tsp smoked paprika
  • 1/2 tsp paprika powder
  • 3 tbsp cilantro
  • Cheese to sprinkle on top (can use df)
  • Oil
  • Water to cook the rice
  • Limes
METHOD
  1. In a pot, add some olive oil and add the onions and garlic
  2. After 2-3 mins add the spices, and sauté for a couple of mins on low heat
  3. Add the tomatoes and veggies and cook for a couple of mins
  4. Now add the beans and mix well
  5. Add the rice, crumble the stock cube and add enough water to cook the rice
  6. Add half the cilantro, cover and cook until the rice is done
  7. Now sprinkle cheese on top, followed by the rest of the cilantro, cover and steam until the cheese is nice and merry
  8. Serve warm with a squeeze of lime juice and enjoy
