Feta and Bacon Stuffed Italian Chicken by The Mummy Diet

Does it get much better than chicken stuffed with cheese and bacon?

I used Spice Kitchen's Baby Spice Italian Blend to season the chicken and it really brought the meal together and made it something special for the whole family!

I used Spice Kitchen's Baby Spice Italian Blend to season the chicken and it really brought the meal together and made it something special for the whole family.
 
Serves 3 

INGREDIENTS
  • 3 whole chicken breasts
  • 100g feta cheese crumbled
  • 2 rashers of bacon 
  • 3 tsp Baby Spice Italian Blend
  • 2 tbs olive oil 
METHOD
  1. Preheat oven to 200c
  2. In a large skillet or frying pan heat the oil to a medium/high heat and fry the bacon until crispy. Use a slotted spoon to remove the bacon and let it drain
  3. Using a sharp knife make a pocket into each chicken breast. Stuff the chicken with the feta and bacon equally, then use a couple of cocktail sticks to hold the chicken pocket together
  4. Using the same skillet, sear the chicken and cook for 4 minutes on each side, then place into an ovenproof dish and season with the Baby Spice Italian blend
  5. Cook in the oven for 15 minutes for the most juicy chicken, check that it is completely cooked through before serving
  6. Serve with a salad and roasted sweet potatoes, or it would work perfectly with rice or pasta
