Orange and Cassia Cookies

A great buttery treat that offers a wonderfully fresh flavour from the orange blossom. What’s more, these cookies will fill your home with the authentic aroma of Morocco!

Makes about 30 cookies.


  • 100g cups fine semolina
  • 65g cup plain flour
  • 100g cup granulated sugar
  • 6 teaspoons baking powder
  • Pinch of salt
  • 2 teaspoons sesame seeds
  • 2 teaspoons orange blossom water
  • Zest of 1 orange
  • 2 eggs
  • 150g melted butter
  • 120ml milk


  1. Preheat oven to 180°C . Line two baking trays with parchment paper.
  2. In a large bowl, add the semolina, flour, sugar, baking powder, salt, sesame,orange zest and mix well.
  3. In a separate bowl, whisk the milk, eggs, melted butter and orange blossom water.
  4. Add the wet ingredients into the dry and mix until you have a soft dough.
  5. Shape into a sausage and leave to rest, covered, in the fridge for 1 hour.
  6. Portion the dough into 30 balls and place them evenly spaced on the baking trays
  7. Press the dough to flatten the cookies and cook for 15 minutes.Allow to rest for 5 minutes before eating.
