Orange and Cassia Cookies

Makes about 30 cookies.
INGREDIENTS
- 100g cups fine semolina
- 65g cup plain flour
- 100g cup granulated sugar
- 6 teaspoons baking powder
- Pinch of salt
- 2 teaspoons sesame seeds
- 2 teaspoons orange blossom water
- Zest of 1 orange
- 2 eggs
- 150g melted butter
- 120ml milk
METHOD
Preheat oven to 180°C . Line two baking trays with parchment paper. -
In a large bowl, add the semolina, flour, sugar, baking powder, salt, sesame, orange zest and mix well. In a separate bowl, whisk the milk, eggs, melted butter and orange blossom water. Add the wet ingredients into the dry and mix until you have a soft dough. Shape into a sausage and leave to rest, covered, in the fridge for 1 hour. Portion the dough into 30 balls and place them evenly spaced on the baking trays -
Press the dough to flatten the cookies and cook for 15 minutes. Allow to rest for 5 minutes before eating.
